Abstract:
      Color reversion of vegetable oil is a big issue in oil industry. Its relevant studies started early but the systematic researches were few，mostly concentrated in Asia. The mechanism and influencing factors of color reversion of vegetable oil，including water content，variety and pretreatment of oil seeds，preparation，refining and storage conditions of oil were summarized so as to provide references for further study on color reversion of vegetable oil and color reversion control in oil industry.
