Abstract:
      The?modification?conditions?of?soy?protein?isolate?（SPI）?solution?for?coating?by?alkali?was?studied.?The?effects?of?mass?concentration?of?SPI,?sodium?hydroxide?dosage,?modification?temperature?and?modification?time?on?the?modification?of?SPI?solution?were?researched.?The?modified?SPI?was?characterized?by?ultraviolet?spectrum?and?infrared?spectrum.?The?results?showed?that?the?suitable?modification?conditions?were?obtained?as?follows:?mass?concentration?of?SPI?816%,?dosage?of?005?g/mL?sodium?hydroxide?solution?9?mL?(the?total?volume?of?water?and?sodium?hydroxide?solution?180?mL),?modification?temperature?60?℃?and?modification?time?30?min.
