The?polyphenols?were?extracted?from?peanut?seed?testa?by?ultrasonic-assisted?extraction?with?70%?of?ethanol?as?solvent.?The?crude?extracts?were?purified,and?the?composition?and?antibacterial?activity?of?the?polyphenols?against?common?contaminated?bacteria?were?investigated.?The?results?indicated?that?the?contents?of?polyphenol,?flavone,?procyanidins?and?resveratrol?in?peanut?seed?testa?polyphenols?were?64.45%,?12.76%,?81.90%?and?0.005%,?respectively.?The?polyphenols?from?peanut?seed?testa?had?strong?inhibitory?effects?on?bacteria,?while?it?had?no?significant?effect?on?fungus,?and?the?antibacterial?activity?increased?with?the?mass?concentration?of?the?polyphenols?increasing. |
