Abstract:
      Cottonseed oil was modified by dry fractionation.The effects of crystallization temperature, cooling rate, crystallization time and stirring rate on iodine value,solid fat content(SFC) at 0℃ and yield of cottonseed solid fat were discussed.The results showed that the optimal fractionation conditions were obtained as follows: crystallization temperature 5℃,cooling rate 2℃/h, crystallization time 10 h,stirring rate 15 r/min. Under these conditions,the iodine value and SFC at 0℃ of cottonseed solid fat were 91 gI/100 g and 31.6% respectively, and the yield of solid fat was 12.89%.
