The effects of oryzanol content, variety of indicator, content of free fatty acids and color of oil on the acid value of rice bran oil determined by titration method were investigated. The results showed that with the increase of oryzanol content, the acid values of fresh refined rice bran oil and first grade refined soybean oil increased when phenolphthalein was used as an indicator; oryzanol content had no remarkable effect on the acid values of the two kinds of oils when bromothymol blue was used as an indicator. The content of free fatty acids and color of oil had no significant influence on the acid value. |
