Influence of storage condition on AFB1 content and quality of corn germ and crude corn oil |

Abstract: |
The corn germs with different moisture contents (5%,9%,12% and 18%) were stored at 25℃ with relative humidity of 45%. During the storage,the contents of crude fat,crude protein and aflatoxin B1(AFB1) of the corn germ and the acid value,peroxide value,color,content of AFB1 of the crude corn oil were detected so as to study the effects of storage conditions on AFB1 content and quality of the corn germ and crude corn oil. The results showed that during the 30 days’ storage,the main quality indicators and AFB1 content of the corn germs with initial moisture contents of 5% and 9% and corresponding crude corn oils had no obvious change,except that the acid values increased by 1.31 mgKOH/g and 3.60 mgKOH/g,respectively. However,for the corn germs with initial moisture contents of 12% and 18%,the content of crude fat decreased by 5.05 percentage points and 6.09 percentage points separately,the acid values of crude corn oils increased by 25.89 mgKOH/g and 61.69 mgKOH/g respectively,and the color significantly darken. The AFB1 contents of corn germs with initial moisture contents of 12% and 18% went up with storage time prolonging,reaching 3.192 μg/kg and 7.528 μg/kg respectively on the 30th day,and the AFB1 contents of corresponding crude corn oils were 1.134 μg/kg and 2.128 μg/kg respe ctively. However,the contents of AFB1 in all the corn germ samples and crude corn oil samples were below the national limited standard (20 μg/kg). |
