Abstract:
      The enzymatic extraction of oil from Antarctic krill was studied with Protamex as tool enzyme.The effects of enzyme dosage，enzymolysis temperature and enzymolysis time on the extraction rate of Antarctic krill oil were studied by single factor experiment，and the enzymolysis conditions were optimized by response surface methodology as follows：pH neutral，enzyme dosage 0.13%，enzymolysis temperature 43.8〖KG-*8〗℃， enzymolysis time 4.9 h.Under the optimal conditions，the extraction rate of Antarctic krill oil was up to 96.06%. The contents of phospholipid，astaxanthin，DHA and EPA in Antarctic krill oil were 28.7%，150 mg/kg，8.99% and 16.90%，respectively.
