The quality change of crude soybean oil with nitrogen preservation was studied through detecting and analyzing the quality indicators of crude soybean oils with nitrogen preservation and conventional preservation respectively. The results demonstrated that compared with the crude soybean oil with conventional preservation, there was no significant change in the odor, taste, color, transparency and carbonyl value of crude soybean oil with nitrogen preservation for 22 months in Beijing, the color got lighter in heating test and solvent residue reduced in general; the acid value and peroxide value of crude soybean oil with nitrogen preservation increased more slowly. Nitrogen preservation had significant effect on delaying the deterioration of oil by postponing the oxidation rate of oil, which played a good role in the storage quality of oil. |
