Abstract: |
The transesterification of palm stearin and soybean lecithin catalyzed by Lipozyme RM IM in n-hexane was studied so as to obtain lecithin rich in palmitic acid. The effects of mass concentration of soybean lecithin,molar ratio of substrates,water dosage,lipase dosage and temperature on the acyl incorporation and recovery rate of lecithin during transesterification were investigated by single factor experiment,and the transesterification reaction conditions were optimized by response surface methodology. The results showed that the optimal reaction conditions were obtained as follows:mass concentration of soybean lecithin 0.3 g/mL(in n-hexane),lipase dosage 25% (based on the total mass of substrates),water dosage 4% (based on the mass of soybean lecithin),molar ratio of fatty acyl group in soybean lecithin to fatty acyl group in palm stearin 1∶2,temperature 46.7℃,time 27.4 h. Under these conditions,the acyl incorporation and recovery rate of lecithin were 19.8% and 50.6%,respectively. |
