Abstract: |
With soybean protein isolate,maltodextrin and flaxseed gum as wall materials,and flaxseed oil as core material,flaxseed oil microcapsule was prepared by spray drying.The retention rates of core material in microcapsule under different temperatures and humidities were fitted by Avramis equation,the fitting was good with R2 all above 0.96,and the release speed was the slowest under the conditions of 5?℃ and 34% of humidity,which could be used as appropriate storage condition.The releases of the microcapsule in SGF (simulated gastric fluid) and SIF (simulated pancreatic fluid) were studied in vitro by first order kinetics,and the results showed that the release speed constant BSGF(2.48×10-2) was obviously lower than BSIF (4.59×10-2),which indicated that the microcapsule had sustained-release behavior in SGF.The release process in vitro was observed by laser confocal microscopy,and the results showed that nearly 60% of core material released in SIF,which complied with human intestinal digestion and absorption law. |
