Abstract:
      The contents of protein and total fat, compositions of amino acid and fatty acid in 18 kinds of soybean seeds were analyzed. The results showed that the protein contents of Hengshan black soybean and Shenmu lianjiatiao soybean in Yulin were higher. The content of amino acid in Fendou 79 in Shanxi and the content of total fat in Jiyu 82 in northeast were the highest. Seven kinds of fatty acid were identified by GC-MS, and the contents of linoleic acid and oleic acid were higher. The contents of unsaturated fatty acids were all above 70%, and the contents of unsaturated fatty acids in oils extracted from Zizhou black soybean, Jingbian black soybean and Jindou 19 were above 80%. The results could provide a theoretical basis for the selection of suitable soybean varieties.
