Abstract: |
The DPPH free radical scavenging activities of polar fraction, non-polar fraction and full oil sample of 13 different common vegetable oils were studied and evaluated, and the correlations between DPPH free radical scavenging activity and different minor components including tocopherol, polyphenol, phytosterol etc.were analyzed. The results showed that the polar fractions of olive oil, sesame oil, wheat germ oil and rice bran oil had higher DPPH free radical scavenging activities compared with other oils, all above 200 mol TE/100 g; the DPPH free radical scavenging activities of non-polar fraction in vegetable oils ranged from 10.53 mol TE/100 g to 553.20 mol TE/100 g, in which the DPPH free radical scavenging activities of wheat germ oil and rice bran oil were the highest;the DPPH free radical scavenging activity of full oil was slightly higher than that of non-polar fraction. The correlations of contents of tocopherol, -sitosterol and campesterol with DPPH free radical scavenging activities of non-polar fraction and full oil were statistically significant (P<0.01),while the correlation between polyphenol content and DPPH free radical scavenging activity of polar fraction was statistically significant (P<0.05). |
