In order to improve the quality of safflower seed oil, safflower seed oil was produced by enzyme-assisted optimum temperature pressing, and the process parameters were optimized by response surface methodology. The results showed that the optimal parameters were obtained as follows: water content 8.56%, pressing temperature 72.9?℃, pressure 3.86 MPa, feeding rate 2 050 kg/h, dosage of enzyme 2.4%, enzymolysis temperature 50.7?℃ and enzymolysis time 4.5 h. Under these conditions, the content of linoleic acid, vitamin E and sterols in safflower seed oil reached 80%, 460 mg/kg and 4 275 mg/kg respectively, and the oil yield was 23.96%. |
