Abstract: |
The identification technology of paraffin in lard was studied by the method of elemental analyzer-stable isotope ratio mass spectrometry (EA-IRMS). With lard as the adulterated object and industrial paraffin as the additive, the δ13C values of different lard samples and paraffin samples from different manufacturers were determined. Correlation and regression analysis were carried on between the paraffin dosage and δ13C values. The distribution range of δ13C value of lard was-21.089×10-3--16.418×10-3, while the distribution range of δ13C value of paraffin was-32.128×10-3--30.713×10-3. There were significant differences in the distributions of δ13C value of the two types of samples. When the dosage of paraffin reached 10%, paraffin could be identified in lard. According to the regression equation, the paraffin content in lard could be preliminarily estimated. The method had the items of simpleness and rapidness, which could provide technical reference for regulation of adulteration in animal fat. |
