Abstract: |
Shea butter (West Africa), sal fat (Southeast Asia), illipe butter (Southeast Asia), kokum kernel fat (Southeast Asia) and mango kernel fat (global distribution) are extracted from their relevant kernels of tropical and subtropical xylophyta, and have been appointed as the cocoa butter equivalent ingredients by the Official Journal of the European Communities and Solvent Extractors’ Association of India. Now they are widely used in the production of high-grade chocolate. However, there are currently no information on these fat products and related standards in China. The distributions, yields of the xylophyta, the characteristics and composition of the extracted fats as well as their usages and criterions were discussed in order to clarify their exploration values and further solve the problem. |
