Abstract: |
Flaxseed oil was separated and modified by dry fractionation, and flaxseed oil with high unsaturated fatty acids was obtained. The effects of stirring rate, cooling rate, crystallization time and crystallization temperature on yield and iodine value of liquid flaxseed oil were researched. The optimal dry fractionation conditions were obtained as follows: stirring rate 15 r/min, cooling rate 4?℃/h, crystallization time 12 h and crystallization temperature -8?℃. Under these conditions, the iodine value and the yield of liquid oil were 198 gI/100 g and 89.2% respectively. The fatty acid compositions and contents and the solid fat contents at 0?℃ of the sample oil and the product oil were compared and analyzed. The contents of saturated fatty acids and solid fat in product oil were significantly lower than those in sample oil. |
