Abstract: |
The free radical scavenging activities of methanol extracts of 10 different vegetable oils were evaluated by ORAC, FRAP, ABTS and DPPH methods, and correlation analysis was used to evaluate relationship between free radical scavenging activities and contents of tocopherol and polyphenol.The results showed that the order of the four free radical scavenging activities of all the samples from high to low was FRAP, ORAC, ABTS, DPPH. The free radical scavenging activities of methanol extracts of different vegetable oils were different from each other, and the scavenging activity on ORAC free radical of sesame oil methanol extract was the highest, reaching 1 187.43 μmol TE/100 g.Polyphenol content had better correlation with free radical scavenging activity of methanol extract of vegetable oil than tocopherol content.The correlations between polyphenol content and scavenging activities on ORAC and ABTS free radicals were statistically significant (P<0.01),and the correlation coefficients ware 0.819 and 0.946,respectively.The correlations between contents of polyphenol and tocopherol and scavenging activities on DPPH and FRAP free radicals were all statistically significant (P<0.05). |
