Abstract: |
Palm olein (OL) and palm stearin (ST) were used to partial replace leaf lard, the physicochemical characteristics and compatibility of them were studied, and the formula which replaced leaf lard was confirmed by euclidean metric. The results showed that palm oil replacing leaf lard had a lot of advantages in physicochemical characteristics and health. The compatibility of palm oil with leaf lard had relationships with temperature and mass fraction, as a whole, the binary systems appeared monotectic phenomenon at low temperature, and appeared eutectic phenomenon at high temperature. The lower temperature, the worse compatibility. The compatibility was good at 35-40?℃. 30% ST blended with 70% OL could be used as formula to partial substitute leaf lard by contrasting resemblance. |
