Abstract: |
Edible vegetable oil is an essential part of people’s daily diet, and it not only provides the necessary energy for human body, but also provides essential fatty acids, vitamins and other nutrients. The quality and safety of edible vegetable oil concerns to everybody’s health. However, the quality and safety problems of current edible vegetable oil in China occur frequently,and the most important problem is the edible vegetable oil adulteration. Based on compositions of edible vegetable oil, the latest research progress in detection techniques of the compositions of edible vegetable oil such as fatty acids, triglycerides, phytosterols, vitamin E and volatile compounds, etc were reviewed, and the present problems were analyzed, so as to provide methods for edible vegetable oil adulteration detection in the future. |
