Abstract:
      In recent years, the demand for cocoa butter is increasing with the growth of chocolate market. However, the production of cocoa butter is limited and the price is high. Cocoa butter alternatives are becoming a hot topic in academics and industry. Cocoa butter equivalents have the most similarities to cocoa butter among the others. Raw oil materials for preparing cocoa butter equivalent were summarized. The production ways of cocoa butter equivalents, as well as raw oil materials compositions and related research were focused on. The knowledge about the production of cocoa butter equivalent could be achieved.
