Abstract: |
The safety of enzymatic modification of 1,3-DG pig fat was evaluated so as to provide scientific basis for its exploitation and utilization. According to Procedures and Methods in the Food Toxicological Safety Evaluation, a series of toxicological studies on the ingestion of 1,3-DG pig fat were conducted, including acute toxicity test, genetic toxicity tests (Ames test, erythrocyte micronucleus test and dominant lethal test)and twenty-eight days oral toxicity test with SD rats and KM mice as test animals. The results of acute toxicity test showed that there was no obviously abnormal in mice orally given of 1,3-DG pig fat and the lethal dose (LD50) was more than 17 g/kg, so it belonged to non-toxic class. The results of genetic toxicity tests were negative and it showed no mutagenicity. The results of twenty-eight days oral toxicity test showed that the growth development and behavior of the mice were normal, and the indexes including weight, food intake, food utilization, blood count, biochemical test and organ-body ratio in treatment groups were in normal ranges, which had no significant difference from those in control group(p>0.05). There was no abnormality in the test of organ histopathology. The research indicated that enzymatic modification of 1,3-DG pig fat was a kind of edible oil without toxicity. |
