Abstract: |
Two kinds of diacylglycerol oils with different diacylglycerol contents(62.7% and 82.6%) were prepared through transesterification from palm olein and glycerol catalyzed by Lipozyme 435. The physical characteristics such as melting crystallization properties and crystallines of two kinds of diacylglycerol oils were characterized by differential scanning calorimetry and X ray diffraction. Then, isothermal crystallization kinetics was studied by the Avrami equation. The results showed that for diacylglycerol oils with similar fatty acid composition and different purities, the diacylglycerol oil with higher purity had higher melting point and initial crystallization temperature. In non-isothermal crystallization, the diacylglycerol oils were similar in thermodynamic properties. In isothermal crystallization, the nucleation mode of diacylglycerol oils was heterogeneous, but there were two kinds of crystal growth mechanism. In comparison, the diacylglycerol oil with higher content of DAG had more β′ crystals and the network formed was smoother. |
