Abstract:
      Contamination of chlorine propanol esters is one of the new hot food safety problems in recent years, and especially the pollution of 3- MCPD esters is more prominent. A certain amount of 3-MCPD esters is contained in all kinds of edible oils and grease foods. The domestic and foreign research status of 3-MCPD esters were summarized and the origin, toxicology and safety, possible formation mechanism, detection methods, pollution level and control measures of 3-MCPD esters and the effect factors of formation during refining were introduced. The urgent problems at present were proposed. It aimed to promote the healthy development of the oil industry in China.
