Abstract:
      The main components of Xiangxi kiwifruit seed and the characteristics of kiwifruit seed oil extracted by aqueous enzymatic method were analyzed. The results showed that the crude fat content of Xiangxi kiwifruit seed was 32.19% and the crude protein content was 16.06%. The protein of kiwifruit seed belonged to incomplete protein because of losing two kinds of amino acids, but the contents of glutamate (Glu) and aspartate (Asp) were high, reaching 6.1 mg/g and 3.5 mg/g respectively, accounting for 25.98% of total amino acids, which contributed to a good flavor for kiwifruit seed. The yield and extraction rate of kiwifruit seed oil by aqueous enzymatic method were 25.89% and 80.45%, respectively. There were 60.59% of linolenic acid, 89.92% of unsaturated fatty acids and 812.41 mg/kg of tocopherol in kiwifruit seed oil.
