Abstract: |
Glycidyl esters (GEs) are trace contaminants in refined edible oils. The quantitative methods for GEs in edible oils included both indirect determination methods and direct determination methods. Indirect determination methods were based on transesterification of GEs to produce free glycidol and it was determined by GC-MS after derivatization. Direct determination methods directly quantified GEs with or without clean-up steps. The sample preparation, instrument conditions, and results of indirect methods and direct methods of GEs in edible oils were described, and their advantages and disadvantages were also discussed. |
