以自乳化性良好的低黏度辛烯基琥珀酸淀粉酯(OSA-S)和麦芽糊精(MD)为复配壁材,采用喷雾干燥法制备鱼油微胶囊,研究OSA-S与MD复配比、固形物含量、芯壁比、均质压力和进风温度对鱼油乳液及微胶囊化鱼油物理性能的影响,并利用单因素试验优化其制备条件。通过分析确定适宜的制备条件为:OSA-S与MD复配比3∶2,固形物含量30%,芯壁比1∶3,均质压力30 MPa,进风温度190℃。 |

With mixture of low-viscosity octenylsuccinate-starch (OSA-S) with good self-emulsifying property and maltodextrin (MD) as wall materials, the fish oil microcapsule was prepared by spray drying. The effects of ratio of OSA-S to MD, solid content, ratio of core to wall, homogenization pressure and inlet air temperature on physical properties of fish oil emulsion and microcapsule were investigated. The preparation conditions were optimized by single factor test. The optimal conditions were determined as follows: ratio of OSA-S to MD 3∶2,solid content 30%, ratio of core to wall 1∶3, homogenization pressure 30 MPa and inlet air temperature 190℃. |
