Abstract: |
With mixture of low-viscosity octenylsuccinate-starch (OSA-S) with good self-emulsifying property and maltodextrin (MD) as wall materials, the fish oil microcapsule was prepared by spray drying. The effects of ratio of OSA-S to MD, solid content, ratio of core to wall, homogenization pressure and inlet air temperature on physical properties of fish oil emulsion and microcapsule were investigated. The preparation conditions were optimized by single factor test. The optimal conditions were determined as follows: ratio of OSA-S to MD 3∶2,solid content 30%, ratio of core to wall 1∶3, homogenization pressure 30 MPa and inlet air temperature 190℃. |
