Abstract:
      Hazelnut is originated from China，and it is a kind of valuable woody grain and oil resource，with wide development prospects．The oil content in the hazelnut kernel is approximate 60％，and the content of unsaturated fatty acids in the total fatty acids is about 90％.Unsaturated fatty acids are mainly oleic acid, linoleic acid and linolenic acid. Therefore, hazelnut oil is rich in nutrition，which is beneficial to human health. The research progress in chemical composition, extraction process, refining process and storage for hazelnut oil was reviewed in order to provide supports for its further application.
