Abstract: |
The effect of particle size of emulsion on the reaction velocity of 1398 neutral protease hydrolyzing soybean emulsion was studied. The enzymatic hydrolysis reaction of 1398 neutral protease was carried out at 45℃, pH 7.0 and enzyme dosage 120 U/mL (based on emulsion). It was found that the reaction velocity increased with particle size increasing from 80 to 160 meshes (particle size decreasing), and the reaction velocity of 200 meshes emulsion was approximate with 160 meshes emulsion. According to experimental data of velocity change with particle size from reaction beginning to 5 h, the equation of particle size of emulsion with reaction velocity in different reaction time was fitted. Comparing the equation curve with experimental data, the law of particle size of emulsion influencing on reaction velocity in 1 h was consistent with that in 4-5 h, while it was different from that in 1-4 h. Based on the fitted formulas, it could direct and optimize the process of extraction of oil from soybean by aqueous enzymatic method. |
