Abstract:
      The phytosterol content in oil is low, but it has a vital physiological function. The progress in extraction technologies and application of phytosterol in recent years at home and abroad was summarized. The loss of phytosterols in each section of oil refining process was introduced. With deodorizer distillate（DD oil）, acidification oil and residual oil as raw materials, the development situations of phytosterol extraction technology and sterol ester synthesis process were discussed. The application of phytosterol was introduced. The study was aimed at providing technical reference for the production and application of phytosterol.
