Effect of pulsed electric field on quality of canola oil by treating oilseed grain |

Abstract: |
The double-low oilseed grains were treated with pulsed electric field (PEF). The quality indexes such as main functional components and physicochemical properties of canola oil obtained under the optimal conditions were studied. The results showed that after treated with PEF, the contents of total phenolics, α-、and γ-tocopherol in canola oil significantly increased(P<0.01), the acid value, peroxide value and p-anisidine value significantly increased (P<0.01), the iodine value significantly decreased(P<0.01), but the change of saponification value was not significant. The DPPH·scavenging capacity of canola oil increased, while the ·OH and O-2·scavenging capacity decreased. The stability of canola oil could be improved by treating oilseed grains with PEF. |
