Abstract:
      Human milk fat （HMF） is essential for the infants growth and development. HMF is the natural lipids which has the most complex triacylglycerols （TAG） composition. One major issue in lipid analysis is the TAG composition analysis of HMF. The analysis methods of TAG in HMF were reviewed and the TAG composition in HMF at home and abroad was compared. Special attention was given to the influence of lactation period and diet of mother on the TAG composition of HMF. The research could help to understand its physiological functions and benefit for the development of human milk fat substitute.
