Abstract:
      The fatty acid composition of five kinds of vegetable seed oils were analyzed by ASE-GC/MS. The results showed that five kinds of vegetable seed oils were extracted by ASE, and the oil contents of the five kinds of vegetable seeds from high to low were watermelon (55.74%), zucchini (48.97%), Chinese cabbage (36.53%), tomato (26.26%), and chili (19.97%). Nineteen kinds of fatty acids were detected from five kinds of vegetable seed oils, including eleven kinds of unsaturated fatty acids, in which erucic acid was the main unsaturated fatty acid in Chinese cabbage seed oil, and oleic acid and linoleic acid were the main unsaturated fatty acids in the other four oils, and the relative content of unsaturated fatty acids was above 80%.
