Abstract:
      Acer truncatum Bunge. seed oil is a healthy edible oil which is high-quality and high-grade. In 2011, the Ministry of Health approved of Acer truncatum Bunge. seed oil as a new resource food. The oil content in Acer truncatum Bunge. seed is above 40%. The content of unsaturated fatty acids is above 90%, and the contents of linoleic acid and nervonic acid were 37.35% and 5.52%, respectively. The vitamin E content is 125 mg/100 g. Acer truncatum Bunge. seed oil has medical and health effects on human body. The advances in component, processing and functionality of Acer truncatum Bunge. seed oil were summarized and its development was prospected, in order to provide theoretical reference for the further research and application.
