Hydraulic cavitation was used to enhance the acylation of soybean protein by stearoyl chloride. The hydraulic cavitation pressure, hydraulic cavitation time, hydraulic cavitation temperature and ratio of material to liquid were researched by single factor experiment with self-made hydraulic cavitation enhancement equipment, then the acylation conditions were optimized using response surface methodology and the surface activity of the acylation product was determined. The results showed that the optimal acylation conditions were obtained as follows: hydraulic cavitation pressure 0.37 MPa, hydraulic cavitation time 60 min, hydraulic cavitation temperature 58?℃ and ratio of material to liquid 1.7∶?1. Under the optimal conditions, the yield of the acylation product was 95.27% with superior surface activity. |
