Abstract: |
Peach kernel is a high-quality resource of oil and protein. To obtain polypeptide with high antioxidant activities from peach kernel,ultrafiltration was used to isolate peach kernel polypeptide (PSP) prepared by enzymolysis method. And three constituents (PSP-1, PSP-2, PSP-3) with different relative molecular weight distribution were separated and collected. Then the antioxidant capacities of these constituents were investigated through four evaluation systems. The results showed that antioxidant capacities of peach kernel polypeptide with different relative molecular weights had significant differences. PSP-1 with relative molecular weight below 1 kDa showed the highest DPPH radical scavenging activity [JP2](IC50=1.44 mg/mL), hydroxyl radical scavenging activity (IC50=1.04 mg/mL), superoxide anion radical scavenging activity and reducing power. So ultrafiltration membrane with retention relative molecular weight 1 kDa could be applied to the isolation of peach kernel polypeptide with high antioxidant capacity. |
