With β-cyclodextrin and arabia gum as wall material, Chinese giant salamander oil microcapsule was prepared by spray drying method. The effects of air inlet temperature, feeding rate, homogenization time and homogenization speed on the embedding rate of Chinese giant salamander oil microcapsule were studied by single factor experiment and orthogonal experiment, and the physicochemical properties of microcapsule were studied. The results showed that the optimal preparation conditions of Chinese giant salamander oil microcapsule were obtained as follows: air inlet temperature 190?℃, feeding rate 3.5 mL/min, homogenization time 9 min and homogenization speed 10 000 r/min. Under these conditions, the embedding rate of Chinese giant salamander oil microcapsule was 94.73%. The moisture content, repose angle, bulk density and particle size of microcapsule were (3.05±0.04)%, (35.41±037)°, 0.28 g/cm3 and 5-10 μm, respectively. The repose angle was between 30° and 45°. The contents of surface oil and total oil were 0.58 g/100 g and 11.07 g/100 g, respectively. The Chinese giant salamander oil microcapsule powder had lower viscosity, regular shape, smooth surface and good liquidity. The quality of the Chinese giant salamander oil microcapsule obtained was good. |
