      采用国标方法分析并比较了驴油以及3种常见动物油脂——羊油、猪油和牛油的化学性质、营养特性与脂肪酸组成及含量。结果表明:与3种常见动物油脂相比,驴油富含维生素A、K1和维生素E,含有微量的钾元素,不含钠元素;驴油胆固醇含量与羊油类似,显著低于猪油和牛油(p<0.05);与羊油、猪油和牛油相比,驴油的饱和脂肪酸和硬脂酸含量低,不饱和脂肪酸和必需脂肪酸含量高,反式脂肪酸含量与猪油类似。因此,可认为驴油是一种优质的动物油脂。
英文摘要:
      The national standard method was used to analyze and compare the chemical properties, nutritional characteristics and fatty acid composition and content of donkey fat and three common animal fats—sheep oil, lard and butter.The results showed that compared with the three common animal fats, donkey fat was rich in vitamin A, K1 and vitamin E, and contained trace amounts of potassium, while contained no sodium.Cholesterol content in donkey fat was similar to sheep oil, and significantly lower than lard and butter (p<0.05). Compared with sheep oil, lard and butter, donkey oil had lower saturated fatty acid and stearic acid contents, higher unsaturated fatty acid and essential fatty acid contents,and similar trans fatty acid content with lard. Therefore, donkey fat was considered to be a good animal fat.
