The national standard method was used to analyze and compare the chemical properties, nutritional characteristics and fatty acid composition and content of donkey fat and three common animal fats—sheep oil, lard and butter.The results showed that compared with the three common animal fats, donkey fat was rich in vitamin A, K1 and vitamin E, and contained trace amounts of potassium, while contained no sodium.Cholesterol content in donkey fat was similar to sheep oil, and significantly lower than lard and butter (p<0.05). Compared with sheep oil, lard and butter, donkey oil had lower saturated fatty acid and stearic acid contents, higher unsaturated fatty acid and essential fatty acid contents,and similar trans fatty acid content with lard. Therefore, donkey fat was considered to be a good animal fat. |
