Abstract: |
A spectrophotometric method for simultaneous determination of hydroperoxide and aldehyde contents in oils was developed. The measurement parameters for the proposed method were studied and optimized. The results showed that the optimal experimental conditions for the colour reaction were at 40?℃ for 40 min when N,N-dimethyl-p-phenylenediamine was used as chromogenic agent and acetic acid was used as catalyst. At the wavelengths of 350 nm and 408 nm, which obtained with the Kaiser method, the contents of hydroperoxide and aldehyde produced in the oils oxidation process could be simultaneously measured. In addition, the contents of hydroperoxide and malondialdehyde of soybean oil and crocodile oil were determined when the oils were oxidized at 120?℃ for different time. Moreover, there was no significant difference between the results from both the proposed method and the standard method. |
