Optimization of alkali deacidification technology of bitter almond oil by response surface methodology |

Abstract: |
The alkali deacidification process conditions of bitter almond degumming oil were optimized by single factor experiment and response surface Box-Behnken analysis methodology, and the fatty acid composition of oils before and after deacidification were analyzed and compared by gas chromatography-mass spectrometer (GC-MS) to explore the influence of the deacidification process on fatty acid composition. The results showed that the optimal alkali deacidification process conditions of bitter almond oil were obtained as follows: deacidification time 30 min, amount of excess alkali 0.25% and mass fraction of NaOH 9.5%. Under these conditions, the deacidification rate of bitter almond oil reached 89.42%. The content of unsaturated fatty acid was about 95%, and the composition basically unchanged before and after deacidification, so the alkali deacidification process had no effect on the fatty acid composition. |
