The effects of the mass fraction of protein solution, neutralization pH, dosage of defoaming agent, pore size of the dry nozzle and addition of anticaking agent on the flowability and fugitive dust of soybean protein isolate were studied by single factor experiment. The results showed that high mass fraction of protein solution, low neutralization pH and large nozzle pore size were favorable for enhancing the flowability and reducing the fugitive dust of soybean protein isolate powder. The optimal processing parameters for the processing of high flowability and low fugitive dust soybean protein isolate powder were obtained as follows: mass fraction of protein solution 14%, neutralization pH 6.5, nozzle pore size 16 mm, and dosage of defoaming agent 0.05%. In addition, a certain anticaking agent could be added according to the need. |
