Abstract:
      Chia seed oil is rich in unsaturated fatty acid, in which α-linolenic acid content is above 60%. So chia seed oil is a natural source of omega-3 fatty acid and plays an important role in preventing chronic diseases related to the diet. In addition, chia seed oil is a rich source of antioxidant components, including tocopherol, phytosterol, squalene and polyphenol. The research progress in recent years on fatty acid composition, physicochemical properties, extraction technologies and oxidation stability of chia seed oil were reviewed, also the research perspective and emphasis of chia seed oil in future were discussed.
