Abstract: |
The extraction process of coconut oil by aqueous enzymatic method was studied and the physicochemical indexes of coconut oil were analyzed. On the basis of single factor experiment, the conditions for extracting coconut oil were optimized by orthogonal experiment as follows: ratio of material to liquid 1∶?1, ratio of complex enzyme (mass ratio of cellulose to papain)1∶?1, reaction temperature 55?℃, dosage of enzyme 0.25% and reaction time 16 h. Under these conditions, the extraction rate of coconut oil reached 83.2%. The acid value and peroxide value of the obtained coconut oil were 0.56 mgKOH/g and 0.36 mmol/kg respectively, which were better than those of industry standard requirement of NY/T 230—2006. |
