Abstract: |
The eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) of food grade fish oil were enriched by Sn-1,3 specific lipase, and then the diacylglycerol and glycerin monoester, which were produced from the above step, were removed by partial glyceride lipase. The refined fish oil with nature properties was produced after post-processing. The influences of specific lipase dosage, purified water dosage, hydrolysis time and hydrolysis temperature on total content of EPA and DHA were investigated by single factor experiment. The fatty acid composition of refined fish oil was analyzed by gas chromatography. The results showed that the optimal enrichment conditions of EPA and DHA were obtained as follows: pH 6, immobilized Sn-1,3 specific lipase dosage 1%-15%, purified water dosage 1%-10%, hydrolysis time 2-6 h and hydrolysis temperature 30-70?℃. After enrichment, the total content of EPA and DHA was 40%-60%, and the yield of the product was 48%-75%. Refined fish oil contained 21 kinds of main fatty acids, in which the contents of EPA and DHA were the highest. |
