Abstract:
      In order to explore the quality difference of Yangbi bubble walnut from different habitats in Yunnan, eight samples of Yangbi bubble walnut from different main producing areas were selected to analyze and evaluate the main components in green skin, kernel and diaphragm of walnut. Soxhlet extractor, Kjeldahl nitrogen analyzer, GC-MS and amino acid analyzer were used to analyze the samples. The results showed that the comprehensive qualities of eight samples of Yangbi bubble walnut in Yunnan were good, and they were suitable for processing high quality oil and protein products. The by-products could be used for the extraction and utilization of functional factors. The contents and species differences of main nutritional and functional components of Yangbi bubble walnut in Yunnan were revealed,which provided a theoretical basis for the selective improved variety and further processing of walnut in Yunnan.
