A method for determining triglyceride in common edible vegetable oils such as sesame oil, sunflower seed oil, soybean oil, rapeseed oil, peanut oil and corn oil by Triple-TOF-MS/MS was established. And the compositions and contents of triglycerides of different ECNs in different vegetable oils were analyzed and determined. The results showed that Triple-TOF-MS/MS method could be used to qualitatively analyze triglycerides of the same ECN based on the relative molecular weight of the primary mass spectrometer precursor (hydrogenation precursor ion, sodium addition ion and ammonia precursor ion) and the fragment ion (\[DAG\]+) pair of the secondary mass spectrometer. A total of 35 triglycerides were detected in sesame oil, sunflower seed oil, soybean oil, rapeseed oil, peanut oil and corn oil by the method. All the six oils contained seven triglycerides LnLL, LLL, LLO, PLL, LOO, PLO and OOO. |
