Medium and long chain triacylglycerols (MLCT) were prepared by enzymatic interesterification of coconut oil and structured lipids rich in 1, 3-dioleoyl-2-palmitoylglycerol (OPO) and 1-oleoyl-2-palmitoyl-3-linoleoylglycerol (OPL). The reaction system was determined and the effects of substrate molar ratio, reaction temperature, enzyme dosage and reaction time on the content of MLCT in the product were investigated. The product was purified by molecular distillation. Under conditions of molar ratio of substrate 0.8∶?1, enzyme dosage 8%, reaction temperature 65?℃, reaction time 6 h and solven-free system the content of MLCT in the product was 70.44%. The content of triacylglycerols in the product reached 97.22% after molecular distillation. The species of triacylglycerols were identified by UPLC-Q-TOF-MS, and the results showed that the MLCT in the product were similar to that in human milk fat, including OPLa,LPLa,OLaO, LLaO, OPCa, OMLa, LLLa, OLaLa, LLaLa, etc. |
