Abstract:
      The antioxidant effect of pomegranate peel extracts on soybean oil was studied. The oxidation of soybean oil was accelerated by Schaal oven method, and the effects of pomegranate peel extracts on acid value, peroxide value and thiobarbituric acid value of soybean oil and the antioxidant dynamics characteristics were studied compared with four natural antioxidants (rosemary extracts, tea polyphenols, bamboo leaf extracts and licoricornia extracts) and two synthetic antioxidants (BHA and BHT) allowed in GB 2760—2014. The results showed that rosemary extracts and pomegranate peel extracts had excellent antioxidation effect, and the antioxidant effect of BHT was the worst. The antioxidant effect of pomegranate peel extracts on soybean oil increased with the increase of the addition amount. Pomegranate peel extracts had the potential as an antioxidant of soybean oil.
