Abstract:
      Virgin coconut oil is rich in medium chain fatty acids and has the advantages of antioxidation, anti-microbial, easy digestion and absorption, and no accumulation of fat in the body. Virgin coconut oil has great application propspect in the baking field. The advantages of virgin coconut oil in food baking, the applications of virgin coconut oil mixed with other baking oils in the baking field, and the application of virgin coconut oil in the field related to baking were reviewed, so as to provide references for its application and development in the baking field.
