      采用复凝聚法研究牡丹籽油微囊的制备工艺。以包封率为评价指标,采用正交试验优化牡丹籽油微囊制备工艺条件,并对其进行表征。结果表明:牡丹籽油微囊最佳制备工艺条件为明胶质量2 g下,阿拉伯胶与明胶质量比1∶?1、囊材与牡丹籽油质量比1∶?0.2、固化剂用量5 mL、乳化剪切速度4 000 r/min,在此条件下牡丹籽油微囊包封率为99.5%;牡丹籽油微囊大小适当,形态规则,分布均匀;平均粒径为12.28 μm,粒径在38 μm以下的占98.06%;Zeta电位为-19.1 mV;红外光谱分析表明,牡丹籽油微囊的吸收峰弱于牡丹籽油的,表明囊芯被很好地包裹;DSC分析表明,牡丹籽油微囊在63?℃左右出现尖锐吸热峰,达到相变温度,热稳定较好。

      The preparation process of peony seed oil microcapsule was studied by complex coacervation method. Taking the encapsulation rate as the evaluation index, orthogonal experiment was used to optimize the preparation process, and the peony seed oil microcapsule was characterized. The results showed that the optimal preparation conditions were obtained as follows: gelatin mass 2 g, mass ratio of arabic gum to gelatin 1∶?1, mass ratio of wall material to peony seed oil 1∶?0.2, amount of curing agent 5 mL, emulsification shear rate 4 000 r/min. Under these conditions, the encapsulation rate was 99.5%. The peony seed oil microcapsule had appropriate size, regular shape and uniform distribution. Its average particles was 12.28 μm, and particles below 38 μm reached 9806%. Zeta potential was -19.1 mV. IR results showed that the absorption peak of microcapsule was weaker than that of peony seed oil, indicating that the core was well encapsulated. DSC analysis results showed that peony seed oil microcapsule appeared sharp endothermic peak around 63?℃, reaching phase transition temperature, which had good thermal stability.
