High ratio of cis- lycopene (cis-Lyco) as the core component, the oils rich in omega-3 polyunsaturated fatty acids as auxiliary functional components and preferably emulsifiers were used to prepare high cis-lycopene-loaded nanostructured lipid carrier (cis-Lyco-NLC) by melt-pre-emulsification and high pressure homogenization. The solid-liquid lipid was selected by measuring the average particle size, encapsulation efficiency and loading of cis-Lyco-NLC, and with physicochemical stability of cis-Lyco-NLC as index, the emulsifier was preferably selected by the storage experiment. The results showed that when the solid-liquid lipid combination was glycerol monostearate and peony seed oil (mass ratio of solid fat to liquid fat 3∶?1), and the emulsifier was casein, the prepared cis-Lyco-NLC had an encapsulation efficiency of 94.6%, a loading of 3.72%, and an average particle size of 185.63 nm. The storage experiment of 35 d showed that the cis-Lyco-NLC sample maintained good physical stability at 4?℃ (average particle size <200 nm), and the retention rate of lycopene remained above 90%. |
